Math teacher turned farmer, Huver Castillo is a third-generation coffee producer. The El Paseo farm resides in the Nariño region of Colombia, spanning five hectares with an average elevation of 1800 meters above sea level.
Experimental no more, Huver's processing of this caturra offering from El Paseo has been refined over four years. The coffee cherries undergo a semi-washed process, starting with a 60-hour fermentation in a concrete tank. The cherries are then floated to remove cherries that do not meet Huver's quality standards. Finally, the coffee is depulped and fermented in special tanks where the pH is measured daily.
What makes this process truly unique is the addition of a lactic mix of bacteria (the good kind), with cooked sugarcane and passionfruit. This doesn't flavor the coffee, but creates a specific set of conditions for fermentation.

Profile
Henry's unique process gives this coffee an exceptionally creamy body. The brew greets you with aromas of almond and chocolate. As the cup cools, you'll taste the aforementioned almond and milk chocolate, along with vanilla and cherry.
We develop this coffee just past light roast. You'll find the center line of the coffee bean has picked up a touch of color. This is our most approachable coffee yet, with relatively low acidity.

Roasting & Shipping
All coffees are roasted to order, sold as whole bean, and ship free. We ship on Mondays and Fridays with some exceptions for holidays. Labels are hand-written, including the roast date and net weight. Be sure to rest this coffee for two weeks beyond the roast date before brewing.
