Jairo Arcila is a third generation coffee farmer and co-founder of Cofinet coffee exporters. Santa Mónica is one of six farms owned by the Arcila family. It is located in Quíndia, Colombia with Castillo coffee trees growing from 1450 to 1500 msal. The Arcila family uses advanced farming and processing techniques, including innovative fermentation methods.

This microlot received a 72-hour anaerobic fermentation before being cofermented with red fruits. The lack of oxygen during the initial fermentation produces winey and funky flavors.
After the first fermentation, the Arcilas add red fruits to the coffee cherries. microbes ferment sugars from both the coffee mucilage and the added fruit, leading to the enzymatic transfer of flavor compounds that result in the coffee taking on pronounced fruit notes - an indirect way to amplify its natural flavors.
The final step is to remove the skin and some fruit pulp from the coffee cherry but leaving the sticky mucilage layer on the bean during the drying process. This is known as a honey process.
Expect tons of sweetness and acidity with notes of strawberry, watermelon candy, honey, and red currant. This is our highest-scoring coffee yet, with our suppliers giving it a cupping score of 88.25!
This roast will appear darker than expected - the anaerobic and cofermentation processes darken the green coffee resulting in a darker finished product - we promise it's a modern light roast.

pour-over (v60)
- 15 grams coffee : 250 grams water
- rinse filter paper and grind coffee
- even the coffee bed then create a well in the coffee bed
- pour 50 grams of water slowly in an outward spiral, scrape the sides of the brewer, then wait for the timer to hit 0:45
- repeat with another 50 grams, scrape the sides again, then wait for the timer to read 1:45
- pour the remaining 150 grams of water using the same outward spiral technique
- adjust grind size to result in a total time of 3:05 - 3:25

All coffees are roasted to order, sold as whole bean, and ship free. We ship on Mondays and Fridays with some exceptions for holidays. Be sure to rest this coffee from ten days to two weeks beyond the roast date before brewing.
